Sweet Potato Soup
3 lbs roasted sweet potatoes
1 cup apple-smoked bacon, small dice
1 cup celery, small dice
1 cup onion, small dice
1 cup leeks- whites only, small dice
1 gal chicken stock
1 quart cream
3 T fresh thyme
salt and pepper
Cook bacon and vegetables until vegetables are translucent. Add sweet potatoes, stock and cream and bring to a soft boil. Simmer for one hour and then puree and strain. Season with salt, pepper and thyme.
